Australian Biscuits Recipes.

Here are just a few of my favourite Australian biscuits recipes.

I've baked all of these biscuits at home and they're quite delicious.

Anzac biscuits, a favourite Australian Biscuit.

Anzac Biscuits:


  • 125gm butter
  • Two tablespoons golden syrup
  • One cup coconut
  • Two teaspoons of bicarbonate soda
  • One cup plain flour
  • One cup sugar
  • One cup rolled oats
  • Two tablespoons of boiling water.


    Melt butter and golden syrup.

    Dissolve soda in boiling water.

    Add liquids to dry ingredients.

    Place in teaspoon size lumps on a greased baking tray.

    Bake at 160 degrees Celsius for 18 -20 minutes.

    Cool on cake cooler.

Ice Box Biscuits, delicious.

Ice Box Biscuits:


  • 2 eggs
  • 1/2 cup shortening
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 cups self raising flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon grated nutmeg
  • 1/2 teaspoon soda
  • large cup of mixed fruit or dates or seeded raisins.


    Cream shortening and sugar, add beaten eggs.

    Mix all dry ingredients and add to mixture, should be consistency of scone mix.

    Roll out in lengths about 6 inches to 1 1/2 inches in diameter.

    Wrap in greaseproof paper individually and place in refrigerator for at least 24 hours.

    Mixture will keep in fridge for at least 3 weeks without cooking.

    Cut in rounds of about 1/2 inch thick, place on flat shallow dish and cook as required in a moderate oven 10-15 minutes.

Bran Biscuits:


  • 1/4 lb. butter
  • 3 oz. sugar
  • 1 cup self-raising flour
  • 1 full breakfast cup bran
  • Pinch salt
  • Vanilla essence
  • A little milk


    Cream butter and sugar, add sifted flour, then bran, then a little milk if too dry, making into a stiff dough.

    Roll out very thinly and cut out with a plain cutter.

    Place on a greased tray and brush with white of egg or sugar and water, bake in a slow oven 15 minutes.

Who doesn't like good wholemeal biscuits?

Wholemeal Australian Biscuits:


  • 6 oz. wholemeal flour
  • 2 oz. plain flour
  • Pinch salt
  • 1 oz. sugar
  • 2 oz. butter
  • Pinch bicarbonate of soda
  • 1/2 cup warm milk


    Sift wheatmeal and plain flour and salt together, add sugar, dissolve butter and soda in warm milk.

    Add to dry ingredients and mix into a dry dough.

    Roll out thinly on a floured board, cut into rounds and place on a greased tin, bake in a slow oven 20 minutes.

Coconut Roughs, a favourite with the whole family.

Coconut Roughs:



  • 125 g butter
  • 1 cup flour
  • 1 cup coconut
  • 1/2 cup brown sugar
  • 1 tablespoon cocoa
  • 1 teaspoon baking powder
  • 1 pinch salt


  • 1 cup icing sugar
  • 1 cup coconut
  • 1 teaspoon vanilla
  • 1 tablespoon cocoa
  • 1 tablespoon butter (melted)



  • Cream butter and sugar.
  • Add sifted flour, baking powder and cocoa.
  • Add coconut.
  • Mix well and spread into slice tin.
  • Bake at 350'F/175'C for 25minutes.
  • Remove from oven and while hot ice with the topping.


  • Melt butter and add other ingredients.
  • Add a little milk to mix if necessary.
  • Stir over a low heat to dissolve and spread over hot base.
  • Cut into bars before completely cold.

Gingerbread Men.

(Should that be "Gingerbread people...?)

You can use extra golden syrup instead of treacle if desired, and extra ginger/cinnamon instead of mixed spice. Decorate with dried fruit, icing or whatever turns you on.


  • 4 oz. butter
  • 4 oz. brown sugar
  • 1 tbsp. black treacle
  • 1 tbsp. golden syrup
  • 1 tsp. orange juice
  • 8 oz. SR flour
  • 2 tsp. ground ginger
  • 1 tsp. mixed spice
  • Gingerbread man cutter


    Preheat oven to 180 C.

    Cream together butter, sugar, treacle, syrup and orange juice.

    Add the flour and ginger.

    Roll out on a floured surface.

    Cut out shapes, put on greased baking trays, decorate and bake 10-15 minutes.
